When it comes to Japanese cuisine, to sushi, anything I have summed up as good has been denounced. After watching Jiro dreams of sushi, I soon became ashamed of what I have declared as decent or good. I realize how in depth the life of sushi is in the pulse of Japanese culture now by following the life of Jiro in this hour and twenty minute feature.
I choose this clip as it is my favorite part of the movie, aside from the son going to pick out fish for the day. Pictured is a succession of Jiro’s menu with explanation as to why he does so. From fatty tuna to hard shell clams, Jiro creates a story through his progression. A journey that few are lucky enough to go on.
