Have your chocolate without all that guilt! This light cake has few ingredients and is relatively simple to make. I’ve adapted this recipe a lot from others. The secret to making mine is adding a bit of coffee! It brings out the flavor of the cocoa.
5 eggs, seperated
2 cups almond meal (you can easily make your own with almonds, I suggest this)
1.5 cups cocoa powder
3/4 cup sugar
1/2 cup of butter (*I used Earth Balance which works just as well, any substitute should suffice)
1 t vanilla
3 T Coffee
1/4 t salt
Preheat oven to 350. Toast Almonds, cool, and grind into a powder with 1/4 of the sugar. Whip egg yolks with 1/4 of the sugar in a mixer. Fold in the almond and chocolate powder. Then, fold in melted, but cooled butter, coffee and vanilla.
Whip the whites in a clean bowl with the salt and remainder of the sugar until they are stiff, but not dry.
Fold the whites into the chocolate mixture and place into a buttered pan that is lined with parchment.
Bake until tester comes out clean with some moist bits of crumb.
Let cool before eating.
Tastes great alone, but a little powdered sugar doesn’t hurt either!
